Christine Patricia Ervin was born on June 17, 1947 to the late Bud Jackson and Mary Alice Ervin in Darlington, South Carolina.

Christine was raised in Timmonsville, South Carolina where she attended grade school. In 1965, Christine moved to Fort Pierce, Florida in search of new beginnings. Two years later she relocated to Okeechobee, Florida to be closer to her brothers, Willie and Levern Ervin. There, in 1970, she met her soul mate, Marcos Antonio Minondo Jr., and they began a forty-seven year journey of love and deep devotion for one another. In 1983 the couple married and raised five children.

Christine was a very independent, strong and hard working woman. No job was ever too menial for her to complete, as she always put family first. She was employed by several companies during her working years including, Phillins Jim Bait Farm, Pratt Whitney, Lykes Nursery and River Gold Fruit Company. Her motto was, "only the strong survive" and she exemplified this throughout her lifetime with resilience. Christine was a leader, quick witted, and fun loving with a sense of humor that could make you laugh and cry all in one conversation. She enjoyed sports and at the age of thirty-eight along with her daughters and nieces joined the local women softball league. Christine proved to be the last player on the team being the only woman to hit grand slams and make decisive wins for the team. To her children, she was the best cook in the land. For no one could season and make mac and cheese, collard greens, fried chicken, corn bread, stewed turtle and fried armadillo better than "Mom!"

On April 30, 2017 during the late night hours, the Lord whispered to Christine that her work on earth was done and she entered a place of eternal rest.

Three brothers precede her in death: Willie "Bubba" Ervin, James Hayward Ervin, and Willie Coe Jr.

Christine leaves to cherish her precious memories: a loving husband, Marcos A. Minondo Jr.; two daughters: Kare Ervin (Robert Futch) and Patricia Ervin-Kennedy; three sons: Michael A Minondo, Adrian L. Minondo,, Marcus A. Minondo, II (Shannon); one brother: Levern Ervin (Juanita); fifteen grandchildren, nine great grandchildren and a host of cousins, nieces, nephews, and sorrowing friends including the staff at Okeechobee Health Care Center, Glades Health Care Center and Hospice of Okeechobee.
